How do I remove a label from the site menu?

If you don't want something on the site menu to be seen by visitors, it can be toggled to "offline".

Gutensite Control Panel --> Site Map --> Advanced

1. Scroll down to the desired menu item. 
2. Click the green globe icon on the right side of the entry.
3. The globe will turn grey, to indicate it is no longer visible on the site.
